In the Amazon jungle there is plentiful of fruits such as papayas, maracuya or passion fruit, paw-paw, chirimoya or custard apple and mangoes among others and is part of the everyday meals of the population. Banana is a staple food, it accompanies almost every dish. Bananas are eaten fried, grilled, boiled, mashed and raw.

 

Juane: Chicken and rice with local spices wrapped and cooked in bijao leaves. It is usually accompanied with fried bananas, cassava root and chili peppers.

The Amazon River provides plenty of fresh water fish, those that are part of the local cuisine are paiche, sabalo, bagre, palometa and even piranha among others. They are prepared in many dishes including soups and stews. The hunt of river turtles and black caymans are now prohibited by law but were once a delicacy in Peruvian Amazon cuisine.
